Cultured 42 is SLN 9 from Kerehaklu Estate in Karnataka, given 42 hours of controlled anoxic fermentation with selective inoculation, then washed. The ferment layers the cup without overrunning it, so it still reads as a clean washed coffee: green apple, lime zest, a floral lift, a soft pastry sweetness. It is roasted light, with filter in mind. Pour-over is the route we recommend, 15 g to 250 ml.
