Chelbesa One is a vibrant washed coffee from Gedeb, Ethiopia, produced by around 1,000 smallholder farmers growing coffee at 1,950–2,200 metres above sea level. The lot consists of the Ethiopian heirloom varieties Korume and Wolisho. Freshly harvested cherries are carefully sorted, depulped and dry-fermented for 2–3 days before being washed and slowly dried on raised beds for 7–10 days. This caref
